Potted Plants on Apartment Balcony

Hi, everyone! This is my very first year gardening! (wish me luck) I live in an apartment with a balcony facing south (so, pretty much full sun). I have one 4' shelving unit I plan on putting in a back corner to provide a little shade and I plan on planting potted herbs and leafy greens on that. So, question one: How deep do the pots need to be for herbs and leafy greens (mostly lettuce)? Question 2: How important is ph? Next, I want to put planters on the railing and I heard that lavender, peppers, and edamame grow well in full sun. How deep do the pots for those need to be? Thanks in advance!
