Here's an ideabook on counter options - if you search houzz ideabooks for "counters" there are several articles in different materials. We have quartz (silestone) and are happy with it so far. Easy to clean and no maintenance. I also like the solid color choices.

We need to know whether your kitchen is more traditional or contemporary? Do you have a large island? No island?

I am still seeing a lot of interest in granite in traditional homes, but if you're wanting a more contemporary look, I'd consider using Silestone or Caesarstone or another of the quartz countertop products. In some contemporary homes, we're seeing granite on a large island where the movement of the slab shows up well, and then solid colors on the wall cabinet countertops. I prefer solid colors in the quartz products, or a light speckle.

It is traditional, and will be u shaped with a 6'x5' island in the center. The peninsula is now on the other side of the kitchen and the fridge and freezer moved but this is the basic layout.

Kate - Do you already have your cabinets installed? We always recommend that you decide on the cabinets first and then countertop will find itself. Your overall kitchen design is very important on choosing the countertop.

No, they should be able to measure for them in about 3-4 weeks, and then they will start building them. we are to start pouring cement Wednesday 5-1! We just have the cad drawings for right now!
