Help with layout and design

We are trying to figure out a new kitchen/family room design. Everything is being replaced...furniture (tv is staying) kitchen and floors.
1. We would like to remove the fireplace to open up into our patio/backyard/pool.
2. The family room is narrow and the kitchen is too deep @ 6ft from one counter to the other in-depth.
3. Would like to have a freestanding island and push it in and have counter seating and remove the dining room table. The post at the island is not loadbearing.
4. We could close those two small windows do uppers and lowers and where the Slider currently is do a window above some lowers.
**Here is one dilemma. If we remove the peninsula and turn it into an island we will have a single freestanding closet. This seems strange to me.
I have included photos of all angles including the entrance what you see. We had considered closing off that wall to connect the kitchen with the closet, but then it cuts us off from the dining room area and visiting with guests in there.
Our other dilemma is that strange beams or pop outs in the ceiling and walls and trying to connect those.
Any suggestions would be appreciated. Thank you!

Would you like to keep the bar (I think? on the far wall behind your table)

Is the closet in the photos your coat closet? Are you planning for it to stay, and/or do you have other coat storage areas?

Do you prefer more traditional floor plans, or open ones?

I'm not quite picturing what you mean about the fireplace-- would you replace it with a door or windows?

Any other specific things about your kitchen that bother you, besides it being too wide and taking up space that could be allocated to the living room?

It's great that you're planning on changing it all around! It'll be perfect when you're done :)

You are talking about making substantial changes here. Do you have a budget amount you think you want to stay within? All I see is $$$$ with what you describe. I also question whether that post at end of peninsula is part of supporting your roof? Before you do anything, you need a true structural engineer to give that a look. Sure looks like a supporting post to me. I know you said it wasn't "load bearing" but do you have that in writing from a structural engineer? Or a friend? etc.
