For a standard size 6-pack, I'd plant one seed per cell too. You don't say where you're located so don't know what your temps and sun are like -- even here in the north, if we actually had sunny days I'd have to water 6-pks at least couple times a day if they were in the sun uncovered, so be prepared to check them if you go that route.

When I'm in a hurry for germination of seeds that don't require light, I sow the seed, water in, then place the container in a clear plastic bag, seal it, and set in on the water heater tank for steady bottom heat. Everything usually sprouts for me in 2 or 3 days that way, so I make a point to check each day. As soon as the first seeds in a pack start to sprout, I move it to a bright location (usually indoor lights) and remove the bag. Works for me anyway.

ETA: you could try a couple different ways and see which works best.

BTW, I use the styrofoam trays from produce or meat packaging as trays under the 6-packs. Makes them easier to move around.
