I love your idea. I don't know how you intend to use this grass ceiling, but most grass likes the sun and will die back without enough of it, so you would have to plan accordingly. PLEASE if you do this, share photos. The only thing to take into consideration with gravity is, how to keep the soil and heavy grass contained.
