Patty, Can you tie a ribbon to the ones you want to harvest or perhaps yarn? Color code it by variety and keep a list. You can put organza bags (sold on the wedding aisle at Walmart as rice bags or favor bags or whatever) over the flower heads as they start to dry so that the seedheads don't shatter and scatter the seeds before you go back to collect them.

I can try that Dawn. I don't know if the pasture where this oil well was has cattle or not. Tie a string around something in the pasture and the nosey cows will find it in a day! I'll give it a try.

Oh, I wasn't thinking about cattle. I don't know if I have a good solution that cattle wouldn't eat. That's a tough one.

If the cattle don't eat the wild flowers, maybe they won't be attracted to whatever you use for a marker or bag. Maybe a stake of some sort. Since it's pasture, hopefully there will be no mowing.
