Two words... Sauer and Kraut. well.. maybe just one word. And it freezes really good or stores in a cool root cellar, heads upside down. if harvested in late fall.

But it will tolerate some but its still a cool season crop. Your ok as long as it does not bolt to seed, insects infest it or the heads go to splitting.

I really think that the good cabbage weather is behind us but it has been a cool year on the east side. Ya might get lucky for a few more weeks.

I'm pretty sure I've had it last into July before, but I'm pretty far south so I usually harvest it all in May and do like Jerry suggested---make sauerkraut, make freezer slaw, store a few heads in the extra fridge in the garage, where they'll last quite a while.....but we don't have a cool root cellar so I can't do that form of storage with Spring cabbage.

That's the problem with cabbage---in a good year, you have so much it is almost impossible to eat it up fresh before it starts to go bad.
