Your plants are fine. Snip off the whole flower stem. The plant will make more flowers. Once the flower goes to seed, the plant has done its job, so keep picking the spent flower stems and they will keep blooming. Feed them plant food and give them full sun.

Do the same thing with snapdragons. Pick off the flower stem when it's mostly done, down to where you want the new side shoot/flower stems to come out.

You're not dumb, you're learning. With these annuals, sacrifice the first flower to get a flush of new blooms. Put the first flower in a tiny vase indoors for you to enjoy.

I don't know how many hours of midday sun they are getting,but they need a lot of full sun. The leaves look very lush. Sometimes over fertilizing can lead to lush foliage and fewer flowers. I mean fertilizers high in nitrogen. A bloom fertilizer is lower in nitrogen and higher in potassium and phosphurus which helps plants put out more blooms.

Thanks all! They are looking a lot better and have more blooms, although down low, not on tall stems. And thanks for the advice about snapdragons. Will be so much easier to take a cluster of spent buds off than individual ones. And the salvias get about six or seven hours of sun, most in afternoon. For fertilizer I have been using the water-soluble Miracle Gro every couple weeks.
