Yes, it can be done. We have had other customers do the same.

However I would recommend that a professional reinforces the piece before adding a heavy piece on top. Also a professional would have to remove the existing top.

We removed the top (not that hard, just had to remove screws underneath and on top) and added granite with a 12" overhang all the way around to bring more seating into my cabin kitchen. Because we did this all the way around, we were able to ensure it would be stable without securing the island to the floor. The downside of this is we can't use the 3 drawers but the other doors and storage are still usable. If you only do one side with an overhang you would need to make sure this was stable otherwise it will tip over. I plan to put hinges on the drawers to be able to use them for storing things we don't use often.
