Unless they're in standing water, they should recover when the soil drains/dries out. Flooded roots stimulate production of ethylene, which can cause "epinasty", which is when the foliage and smaller stems "weep" or point downward. Is that what you're seeing? Or are you seeing real wilt, where the leaves are floppy and thin and have lost turgor?

Next time, I recommend not hoeing down around the roots. Damaging the roots can cause further wilting and stress, and it creates openings for soil diseases to get in.

Please post pictures. "Wilting" means different things to different people.
