When to harvest lettuce seed

I've heard that lettuce is biennial and it goes to seed its second year. This confuses me. I have some lettuce growing now that I want to go to seed but if I let it go until next year, there's no way it will survive the winter so I can collect the seeds... How does this work?

Lettuce bolts and sets seeds over varying lengths of time. It can be a few weeks even if the plant is stressed. Have any of yours bolted yet?

No it has not bolted. Hence the question.

That's surprising. When were the seeds sown? Even in my cool damp climate spring and summer sown lettuce bolts before winter.
