IMO, if u don't use the same material u have it will look piecemeal/mistake and u will not be happy with it. either use same material you have now, or get the same kind of oven. worst case, new BS.

Find a wonderful tile that works with your quartz to put behind the stove and up to the range hood.

My husband wants to remove the existing counter backsplash if we can't find someone to make us the piece to connect the counter. Is this something you would do?

I'd remove that 4" backspace everywhere and get a new backsplash.

I billed a customer for 4 hours of shopping trying to find a stone match on a sink repair which is similar to the problem here. Fortunately, he wasn't too fussy. It may be more cost effective to replace the splash.

Trying to find the piece to carry across may be difficult since you have to rely on finding it and the fabricator who is willing to cut and charge for just that piece - not likely. However what's the trade off if you have to hire some one to tile? Unless of course you do it yourself. I think you can just add a nice tile or stainless sheet or piece of glass behind there.
