It'd be okay to eat. Rodger Winn, of Little Mountain, SC, once told me that his mom used to make pies out of green (unripe pumpkins). I haven't tried it myself, though I still grow the pumpkin which was used by his family.

It certainly won't hurt you. Probably, one can cook the green flesh till soft and treat it just like ripe squash. The color will be different, and the flavor as well. But it would be usable.

The best way to tell if a squash or pumpkin is ripe, is not by color of skin, but rather hardness of skin. If you can break the skin with a fingernail, then it's not fully mature. Once it reaches the point that you can't break the skin, it's fully ripe. They probably ignore this rule, when harvesting ornamental, orange type pumpkins, as long as they're orange. The majority of those sold are never actually eaten.
