That's what I have done. Put in a dark cool area and let the leaves wither away. However, getting it to bloom in December after bringing it back out has been a challenge. I usually get February blooms (fine with me!). There's an Amaryllis forum that has good some good conversations. Been a while since I read them and I have been lackadaisical with my Amaryllis.

I would suggest using new soil when you bring them back out. I have one that grew a huge yellow mushroom the second year from the soil. Fascinating, but when it decayed, a bit gunky.
