If the pod had started to shrivel - especially on the stem end - then the seed should be fully mature, or close to it. You can either pop the seeds out to dry them, or dry them in the pod under a fan. If the pod was still firm but had begun to change color, the beans are probably still viable (to varying degrees) but will likely have a shorter storage life than fully mature beans.

If the shelled beans have not yet begun to change to their final color/pattern, their viability is questionable. Under those circumstances, germination testing would be recommended, preferably early enough to obtain fresh seed if germination is poor.
