How quickly do I move figs up to larger pots?

My two fig cuttings (Marseilles VF & Celeste) are doing well in their 1-gallon pots. They're about to go dormant for the winter, so I'm planning on repotting next spring. Should I got to a 3-gallon pot for a year, then up to the 10 gallon I have waiting for them, or just plant them as is in the 10-gallon?

I was thinking that moving them up to fast would cause them to be more susceptible to root rot, and also make them spend more energy making roots and more time growing. Seems to me that the 3 gallon for another season made sense, but I bow to your superior knowledge.

When I had a huge Brown Turkey fig, I would just stick cuttings right into the ground, but nowhere to put them in the ground around here.
