Kitchen Layout Dilemma, please help

I have a smallish, awkward layout for my kitchen. The lower cabinets have water damage and have to be replaced giving a good opportunity to fix the layout to be more efficient but I'm stuck. Right now, with the sink at an angle, I can't open/close the window so ideally, we would put the sink flush with the neighboring cabinets and push the peninsula out about 10 inches. I'm grappling at whether to keep the U shaped kitchen or do a L shaped kitchen and place lower pull outs between the recessed fridge and pantry. There isn't enough clearance to have an island. Any advice?

Picture caption: Fridge and oven are missing. Fridge alcove is recessed into the wall.

Kitchen from the family room...dining room is on the other side of the oven/microwave wall.

Main working kitchen...very little usable lower cabinet space.
