At first glance I like the last one , it makes the most sense to me. I would not do coffered ceilings in such an open plan they lead to all sorts of trouble like lighting placement , furniture layouts. I hope you have a KD already on board do not use the architect for that job.I hope you have planned for the T.V to not be above the fireplace so maybe rethink the fireplace placement.

we do not have a kitchen designer... only a drafter who basically will draft what we want but definitely need advices here as it is hard to imagine how it will look like.

with the last picture, the only thing is it seems that the dining table will be a little off the living area

Why would you not recommend placing a tv above the fireplace? Many people do....just curious.
