Friends of mine did almost the exact same thing to their bathroom and while it would not be what I would like it works for them. One thing I wanted to point out is that because your having cupboards on top and both sides make sure you install some form of recessed lighting or some form of lighting under that top cabinet because it will be a bit dark without out it.

Agreed, in this case, I would suggest an asymmetric design.

If you split one or both of the columns into three, you could have the middle part open storage for towels. If you do nice square cubby holes that a rolled towel will fit into for example...

And if you do the entire back wall behind the sink, you could add lights to the sights of the cabinets too. More flattering than downlights above a mirror.

Haha... I'm chuckling, because I mocked something up for you and couldn't get the perspective right. And I couldn't flip the light, so had to turn one of them upside down. Ah well... I meant well :-)
Also handy for storing your vast collection of wine bottles. Or rolled up towels.
