You are thinking correctly! Keep it simple--white rectangular tiles with white grout is a classic choice. Handmade tiles have a subtle relief texture that would work nicely too.

At least do something a little visually appealing. this herringbone for example.

your granite isn't super busy. If you do pick white tile, then do a very light gray grout. it gives your tile a little delineation so it won't look like a giant white sheet.

The square tile is a nice change from the standard subway. CleTile offers some in the white,,,looks like this, but they come in a 4x4 and a hex shape too
