Dwarf Burford (llex cornuta burfordii 'Pygmy') is the standard in much of Texas. It fruits reliably here once mature. Does not require a pollinator as do many other hollies. Can be kept small with persistent pruning. Read somewhere that Neil Sperry claims it can be kept as short as 18 inches (???), though it's more common to see trimmed to 3 or 4 ft. Ours wants to naturally top out at just over 6 ft and we prune it for width twice a year. 'Dwarf' is a relative label.

'Carissa' is another dwarf variety of Chinese Holly used around Dallas that has beautiful foliage and grows a bit smaller than Dwarf Burford. Though I don't recall ever seeing berries on one.

edit: 'Rotunda' is the other I. cornuta dwarf (NOT the I. rotunda tree) a neighbor is growing. More "Christmas-like" multi-point leaves, but don't believe it reliably sets fruit either.
