Are they bare root? If so, just keep them cool, out of direct sunlight and with the roots moist and protected from exposure to air. If not bare root, also keep out of direct sunlight and make sure roots stay moist (but not wet). And protect from severe cold (20's) if that should occur before planting date.

@gardengal48 Yep, I think all the trees I ordered were bare root. From what I understand they usually wrap the roots up in wet newspaper or sawdust, so I assume it's probably smart to keep that intact and just keep it damp? Our highs for the next week are all in the 50-65 range, is that 'cool' enough if I keep em out of direct sunlight in the barn or garage?
