door trim overlaps bathroom counter

I have a bathroom that's split into a toilet/shower room and an outer room with just two sinks on top of a cabinet at one end of the room. I'm having problems with the sink room (Bath 1).

For whatever reason the standard cabinet size is a bit too deep for the space, such that the edge of the cabinet hangs over the 3" door trim (See below for left side door with trim, and last picture shows trimless right side door)..

Contractor said it's ok because the countertop quartz will go around it, but I am not so sure. I don't want to cut the door trim either, but will be ok with getting the thinnest trim.

Cabinet company says I can trim the cabinet depth down by 2" but the drawers won't really close that way, so they don't have any clue what they are recommending. Also the 15 5/8" deep sink and single faucet may not fit if I trim the counter!

What should I do?

- Scrap it all and get a slimmer vanity that doesn't butt up against the two doors?

- Try to get a narrower door trim?

- Cut the quartz to fit the space like the contractor recommended?

- Get a smaller sink or partially recessed one?

- Tell them to make the quartz countertop hang over the edge as little as possible?

- Do a bit of everything above and hope it fits better?

Oh, and they installed the door backwards too. But they will fix. GAH!
