In-Shower Lighting Help

My wife and I are looking at lighting options for our new remodeled shower. We gutted the existing fiberglass with a ceiling that contained a recessed light so there's still a hot wire that I've capped and would like to use. You can see it hanging on the left hand side. For anyone questioning my use of green board, my brother in-law is a pro tile guy and is going to Kerdi-membrane the entire thing and tile over it so it will be waterproof.

Our first idea was to put an in-wall sconce that is wet rated above the shower head but I'm having a heck of a time finding anything online and the options I find are not the style we're looking for.

My next idea after countless hours of browsing through images is to install a submersible LED lighting kit like this one: LED Light. This would look really cool and be pretty functional about ankle-knee high within the shower.

We are pretty much stuck on what other ideas or options are out there. We don't want a recessed in the ceiling as that would probably require an electrician and be a little over our budget. Plus I don't want to do anymore drywall than I have too!

I'd also rather do this on my own. My father-in-law has a lot of experience with electrical and plumbing and I'm confident he could help me get anything I needed installed to code. I'm just wondering if it's possible to join that existing hot-wire to a junction box and then relay that to the LED lighting kit?

Any ideas or input would be much appreciated!
