Why plant more then one pumpkin seed?

I have been trying to grow pumpkins and I think it would be better to only plant one seed at a time in the same location. I can't see the benefit of having two, three or some sites suggest four or five plants in the same hill. This seems way too crowded. I don't understand the concept or reason for hills either. I got some straw, because I read you have to cover the hills with straw if it gets hot, but how to keep the straw from blowing away in the wind? I have google searched this and I can't find a site with photos of planting pumpkins step by step. All my pumpkins failed this year, because they got a very heavy alphid infestation, but next year I will be trying again. I don't know how to stop the alphids and of course, I want to be able eat the pumpkins or make a pie, so I don't know if I can spary them. Any tips would be appreciated.
