Roots and caudex below and above

When I got my obesums to play with two years ago. I buried their caudexes. Now how long do I leave them under ground. Don't they continue to grow or thicken when moved above? These two will only show the triangle shape caudex not like the twisted roots of the small one below. Or that just my opinion ?

I have another that came to me small and above ground and I have not looked at its roots. I am confused when to lift for a better look ? The two plants need trimmed after blooming. Not sure which one I will keep. The first one hasn't bloomed.

Above ground when I first got it. Trimmed hated the grafted flower. I hope it doesn't leave a cut spot like above. How do I prevent the flat healed spot? Is grafting there my only option ?
