Thinking they might need moth pollinators...?

Sphinx moths are 1 type, I believe.

My night blooming cerrius is decades old and as far as i know has only ever produced 2 dragon fruits. Didn't even know my cerrius was where dragon fruit came from til that bright pink fruit showed up at the tippy tippy top of the palm tree the cerrius climbs.

All cereus can produce fruit, but not all cereus are dragon fruits. Night flying insects and bees usually pollinate them, but it's tricky. Guess that's why they're so expensive. Here's a good article I had bookmarked.

Some do better with cross pollination with other varieties. Also, many plants that are pollinated by moths, bats, etc like to also be hand pollinated at night.

You can also raise the humidity around the plant such as watering it at the roots (don't get any water on the actual bloom) right after you pollinate. For some reason, this helps the pollen 'take'.

I often pollinate night bloomers and have found a few tricks over the years.

If you want to draw in some natural pollinators you can sometimes trick them with moonflowers or night jasmine/Cestrum nocturnum planted right next to your cactus flowers. They go crazy going from flower to flower and will end up hitting all of them including the cactus flowers. Sometimes with plants like cactus or other things the moths aren't used to, they may ignore that part of the yard/flowers in favor of other favorite flowers. I've used this trick to get hawk moths to pollinate my white mandevilleas which don't have much scent. The moonvines/Ipomea alba that I placed next to them drew in the moths which then also went to the white madevilleas. Brugmansia also works well to lure in the moths.
