How do I get my apple chips crispy?

After 10 years of planting I'm finally getting a lot of apples. Various varieties; honeycrisp, state fair, sweet sixteen, Zestar, snowsweet, Macintosh, and others.

Making apple chips every day with a "Nesco" dehydrator. Have not figured out how to consistently get crispy chips. Apples are sliced and cored on a little manual crank type slicer/corer, cut once to make round chips (with a hole in the center), sprinkled with cinnamon, and then dried at 140 degrees for 24 hours. I have gotten crispy chips but usually they're not quite crispy and I don't know why. Everyone likes the crispy ones best.


Advice anyone?


ps. In my central MN location I have found one spraying with triazicide about 6 weeks after petal fall will give me mostly bug free apples. no spray and all I get are horse treats so the triazicide is very effective.
