Etiolated polka dot plant: Where should I trim?

Picked up this pair of horribly etiolated, rootbound polka dot plants for 50 cents each a few months ago. I've been giving them some time to get acclimated to my home and some more light/proper watering ever since. I think they're strong enough to trim back now!

Where should I trim these guys? I already cut off some of the younger limbs that will be better for propagating, but which of the mature limbs should go? Do I need to cut all the way back to the soil? Or will they eventually fill in like this?
