It's best to choose paint once you have your furnishings in place, but not everyone does that., because it's such a big job and painting is so much easier when there is no furniture to work around. Is that something you're willing to do? If you just get your sofa and area rug in place, it wouldn't be that much to move for the painters and you'll have something to work with.

If not, my approach would be to choose the lightest color of the stone in your fireplace for the family room, which will likely fall into the lightest of greige to beige categories - it'll basically be an off white. For the foyer you could stick with the same family, just go a tad darker, since it the light is better in there.
