i have had a variation on zucchini bread made from hosta petioles ...

i believe others have claimed that butter and garlic can be used ... but of course.. done right.. butter and garlic will make a flip flop good ... lol ...

not unlike zucchini ... i believe it a rather mundane veg ... used as a vehicle for the flavors you cook it with ....

the flowers are said to be peppery ...

I did seem to recall H. montana was the preferred one and the flowers of H. plantaginea. I would probably try them from an Asian market and leave my garden undisturbed. Hostas are edible.

What's ew, the young eyes look like yummy tender greens before they unfurl...same appeal as fiddleheads IMO.

Maybe worth harvesting in the springtime if you have any plain green monsters growing in like...your giant forested backyard where you don't actively garden? I don't know, I don't have such space, but I'd try if I did!

I’m baaaaack!!! And I have an update. Hostas taste good!

Admit it. When they started peeking out of the soil this year you were curious. “Whatever happened to that crazy Houzz guy who was talking about eating hostas?” you wondered. Well, I’ve been busy munching on hostas.

My recipe:

Cut them when they’re just emerging and still tightly rolled. Rinse well. Cook briefly in olive oil over high heat. Let them crisp on the outside while remaining crunchy on the inside. Salt and fresh ground pepper to taste.

They‘re yummy, similar to a mild asparagus (which is good because I find asparagus strong). They are a little on the bland side. Next batch I plan to try soy sauce and/or lemon juice.

Every true Hosta fan should try them at least once. Don’t wait for the zombie apocalypse. This isn’t survival food. It’s pretty good. Craving fresh veggies after a long winter. Give Hosta sprouts a try!

I double dog dare you!

Do you really think people who grow hosta for pleasure and their beautiful leaves would sacrifice a year's growth just to taste them? Think again.

Speaking of dogs and dares, I have a new dog who thinks they taste really good! Of course, his were all raw.

I would try it, but I don't want to set any of my fledgling hostas back in their development.... so maybe some day....

bkay - my late dog, Susie (GRHS) never ate the hostas, or any other plants. She just ate mulch... Yuck! I couldn't understand that! I'm hoping to get another dog late summer/early fall - and she'd better learn not to eat hostas!!!

I guess it’s comforting to know that if that zombie apocalypse comes, we’ll all (including our dogs) be able to eat.

I've never had a dog eat them before either. Jack eats everything though. I bought some cauliflower for him yesterday, as he likes it. He's about a year old now. We've had him a couple of months. Fortunately, he isn't interested in the leafed out hosta.

As Babka alluded to, one of my older dogs, Cleo, was a wrecking ball her first year or two. She loved Babka sticks (little bars of wood that Babka uses to lift her pots off the deck). That year, there didn't seem to be any pot feet available, so I made Babka sticks. She would turn the pots over to get the sticks and chew them.

One time, there was a possum who invaded her territory. I saw the flattened Invincible the day before it happened and speculated something was sleeping in that pot. The next morning I found the whole three shelves of hosta turned upside down, knocked over and scattered. Apparently, they had quite a tussle. Fortunately, it was toward the end of the season. So, I just repotted everything and hoped the possum didn't come back. It apparently didn't. I must have lost the photos of the mess when my computer died, as I couldn't find them.

She's now middle aged and more sedate, although she killed a cat in the back yard a couple of months ago. So, I guess she's not that sedate.
