Can you post closer up pics of counter?

Beautiful cabinets and countertops, but glass tile may be too modern against them. You'd have to bring home samples, just know that glass tiles tend to read differently once up because of how they're installed. Also, please so busy mosaic. A solid glass tile may be okay but again bring home samples.

Would a subway tile work? And maybe just have it laid in a different pattern?

A subway tile would be perfect. I would not go for a different pattern than a traditional brick. It risks reading busy against your cabinets. Buy a few inexpensive tiles and play around with patterns to see. You can glue them against a sturdy cardboard and prop it flush above your counter to see how it would look. I could easily picture a cream crackle subway tile or even a square one if the grout lines are miniscule.

Love the one in Filipe's second link. Delicious color, and the slightly handmade look takes a little edge off the otherwise sleek look of subway and renders it warm and a bit organic.
