I always like to tile wall-to-wall, with everything out of the way. Cabinets now sit on the tile and there are no cuts that might be obvious. Also, if you ever change things out, you can do so without odd cuts to deal with...

It also allows the vanity to sit an inch or so higher.

I recently helped my Dad remodeled his house. In all the bathrooms, the contractor installed the tile flooring wall-to-wall before bringing in the vanities. Same in the kitchen. Seems like the best way to do it in terms of the GC scheduling the trades, the tile pro doesn't have to make a lot of cuts to meet the vanity, and having a tile pro working around your beautiful new vanity might result in dings or damage. They need room to work.
