1) Depends on how much sun it is in. If in part to mostly shade, narcissus should be fine. In more sun, pachy's growth tends to be sparser so you could do something like daylilies. And any woody plants (shrubs)

2) Digging it out works. It is easiest if you slide a garden fork sideways under the foliage and lift the root system and rhizomes. You can also use a broad spectrum herbicide like gyphosate but the glossy leaf surface resists penetration so best to cut the patch back and apply to the exposed stems. And you will need to be careful of any desirable plants in the area.

Thank you for your response. It is primarily in shade to part shade and it is overrunning me. It is on a hill so I appreciate its ground holding properties but I need to contain it. It is starting to over run neighboring perennials.

There is a gorgeous garden near me which has forget me nots growing in the pachysandra! I can’t imagine how but it is!

Try adding a buried root barrier to keep it contained. IME it is fairly shallow rooted, so one 4” deep should be enough.
