The more stems originating from the root crown or appearing above ground, the stronger the vine will be with increased disease resistance, a more developed root system and heavier flowering. Leave all the stems. This is far more desirable than limiting the number of stems and is exactly the response intended by hard pruning new clems their first couple of seasons in the ground. Mother Nature just did the hard pruning for you :-)

The shoots won't sprawl. Once they get some additional growth on them they will automatically start grabbing on to the the trellising, although they may need some careful guidance to get started.

I was going to leave everything growing on the stump but thought I'd better ask in case the other way would've been better. I had pruned the dead stuff last fall to about 8" tall but even with snow cover, it decided to die down even more than that. We'll see what happens. :^)

Just an update:

Ended up with 3 main leaders and 2 wannabees, one on each side, that are about 7/8 the way up the trellis. The main 3 tried to climb onto the roof but ended up content with 'just about'. :-) Now for the flowers.
