Just because MIL gave you her cherry set does not mean you have to use all of it (or any of it) unless you want to. Chances are good it is quality stuff but not your style. Maybe you can use one or two pieces in your room and put other pieces in other bedrooms.
If the bedspread came with the set, I suggest you not use it even if you are a grandma. It looks elderly. A nice simple duvet or comforter in a light color may add a bit of cheer. Art on the walls and window treatments may also help.
My bedroom set is 54 years old, but we still use it because it is an attractive transitional style and is made of nice walnut wood. I upholstered a cushion to add to the headboard in a floral fabric. It looks great, adds personality to the room and is comfortable for sitting up reading.

We might do a headboard over the bed, and move the furniture more to the left so that the end tables and dresser have room on the right side. Perhaps us including a design will help?

I would put the headboard back on. The bed doesn't need to be centered on the wall. Scoot it over toward the windows so you have space by the long dresser. I would remove the mirrors, and replace them with a more streamlined long rectangular mirror, or artwork. Update your table lamps. I think the furniture can work with the right accessories and bedding. Try white bedding. I know you just painted, but gray isn't the best choice with tan carpet and cherry furniture. The room could be beautiful in a very soft sage green.

Is this your bedroom or a guest room? IMO there is too much furniture for the space, those mirrors need to go for sure the lamps are too small and we need some info for real help. Whay is your style ? For me this would never work but it depends on your style.

The bed needs the headboard, so I'd put it back on. Pick out a dozen traditional bedroom photos of rooms you really love. Then pick out some new bedding that has colors you love. Pull a new wall paint color from the bedding. Then choose some new lamps that are larger in scale and a bit more substantial than the ones there now.
