Help identifying clump found in front yard

I saw a pile in our front yard that I thought was dog poop. As I was going to rake it up and dispose of it, though, I realized that it wasn't dog poop, but some sort of mass that was deep in the grass. I ended up digging it all the way up, and it definitely isn't poop, but I'm at a loss for what it could be. It's about the size of a grapefruit, and weighs less than a pound. We're in Denver, CO if that helps with the analysis.

Looking at pictures online, I think you may be right. It was attached to a massive root system (see portion we cut out with loppers below). No idea where the roots are coming from, as theres nothing around that would have a big, expansive root system like that.

Anything we can do as a preventative, to kill this stuff? There’s really nothing but grass around, but concerned about the flower beds maybe 5-6 feet away.
