Cleared overgrowth - next step?

Ok design friends, help me out: we just removed a ton of overgrowth that was taking over our shed and found that we have a lot of rock and will only be able to plant grass on part of it, not all of it. Any thoughts on what to do next? Spray and cover with mulch? Groundcover? Plantings? Will probably put fabric and rocks around the back/side of shed (3-4 ft deep) to keep vegetation away but it's actually a much larger area than it looks (goes another 50 yards to the left). I'd like for it to look pretty but it needs to be LOW maintenance - we have a ton of landscaping elsewhere and can't keep up with weeds... fabric, cardboard and mulch do nothing to keep them at bay. We're in zone 6b in the Shenandoah valley. **Edit: Pictures are in comments section.
