I would do linen closet next to commode and give back the other half to the previous room as a smaller closet.

Have you thought about where you are going to hang your towels? How deep is the area you "consumed"?

Leave the closet alone...a bedroom needs it more than the bathroom does. Can you reverse your door so that it opens into the bathroom rather than whacking some poor soul in the face if they happen to be walking past the door when you open it into the hallway? Can you adjust the door frame so the door clears the edge of the toilet better? A “floating” toilet confuses me...what do you mean by “floating”? Your vanity will have plumbing for two sinks, so I suggest you have the center of the vanity with all drawers (4 or 5) and put a tall cabinet against that bedroom closet wall for some extra towel storage.
With the toilet next to the door, I would use a solid core door to reduce the noise coming from the bathroom. And add a good exhaust fan to remove moisture and aroma.

Your toilet space is not to code. The minimum is 2'6" and you are under. Shorten the closet on the other side by about a foot and put a waste can next to the toilet. It will feel more spacious then.
