As for your barstools... are there any colors you love? I love an all white kitchen, but I do feel like white stools will just get lost in your space. Is there adjoining room with some color that you want to bring into your kitchen?

Builder Depot is a good brand. Tilebar has Calacatta. (they have a beautiful Random bar called Tuscany)

I just ordered some samples, Calacatta, honed,4x12 and they're actually pretty nice

Here is my open concept dining room to the kitchen. The window trim will be cream, same as the cabinets. Table will be staying, just needs a refresh. So you can see the theme is light wood and cream.

have you looked at Encore Ceramics? i think their Beach Blend would go perfectly. (it comes in all sizes and shapes)
