Bar sink installation

A diy remodel for a kitchen coffee bar. We are installing a stainless steel sink in a 8 ft Formica countertop. We plumbed in the smaller 18" cabinet in the 8ft section of the countertop. Yeah we should have used to adjacent cabinet but it was 36" and we didn't want to waste the cabinet space for the sink. We purchased an Elkay Dayton 17x19" sink. Yes the sink is the wrong size. It's too big. But the bowl dimensions is 14x14. Could we still be able to use it. The inside dimensions of the cabinet is 16 1/2. We have never installed a sink before and I can't take any chances. If we cut this hole and it doesn't work my countertop is ruined.
