Is it COLD enough to winter sow? Help!

This is my first year to winter sow. I've saved a billion plastic spinach tubs, bought my bags of soil/peat moss/vermiculate, have my seeds ready...but the weather is not cooperating. I'd planned to do it in this week (1/30), but looking ahead, it will be in the low 60s in just a few days, for a few days! I don't want my seeds to germinate, but I also don't want to wait too long to get them in the tubs. If the weather remains in the 40s/50s, as is the next-10-day forecast, will that harm my new seeds? I'm sure we'll get some freezing temps, but this has been a strange winter with freak warms spells, and I don't want my seeds to germinate. If they DO germinate early, are they goners? Please help!
