Need help with my apple espalier!

I am in the South Carolina upstate, zone 8a. I planted this Cripps Pink Lady last fall, and I'd like to make it an espalier. I intended to make a heading cut during its dormant period to get it started. But we've had a mild winter, despite a few freezes, and it seems to me that it never went dormant?


It was shipped cross country in September, definitely suffered some transplant shock and some confusion afterwards (I saw a few blooms in October and November). I expected that by now it would be leafless. But it still has plenty of green leaves and some signs of new growth.


So should I go ahead and make the heading cut anyway? Thanks for your help!
