The newer knobs that are black and phenol are safe to 450 degrees....some of the early ovens had an iron "loop" for a handle on the lid, and at one time they offered a metal replacement handle for the phenol one in case you wanted to do the artesan bread which bakes at 500 degrees.

I’ve got a panini pan with ribbed bottom that I used on my past two electric smoothtops without issue. So at minimum I’d guess you won’t damage anything by trying.

Thanks, Linda. This is an older knob, I think. not a loop, but a square knob, and I’ll have to check my mother’s records, if she kept one for a replacement knob. DH put the whole thing in the oven at 350 tonight, and the knob didn’t break. So hopefully it’s all good.

FOAS, thanks! The ribbed bottom seemed to work out fine for tonight’s chicken cacciatore (yum!). I want to do ”Julia Child’s Bœuf Bourgignon” having recently read My Life ina France and watched Julie and Julia, so I think we will be good to go with this old Dutch oven.
