If you want the flour gravy, it is like any other. Save the turkey fat from the drippings ( or use butter or oil). If you have 1/2 cup fat, add 1/2 cup plain All purpose flour and cook in a skillet until the flour browns slightly. Stir with a whisk, constantly. Add reserved drippings gradually, stirring constantly. Add water or chicken broth if too thick.

If you ever make beef or chicken gravy, it is the same. Unless you burn the roux, you cannot mess up! Too thin, more flour or cornstarch. Too thick, water or broth.

I like the giblets (cooked liver, heart, and gizzard), in turkey gravy, but a lot of my family doesn't, so I leave it out now. I have heard of adding cooked hard boiled eggs???

ETA: I should realize that not everyone grew with gravy as a side at every meal. You had a meat, 2 or 3 vegetables, a starch, rice, potatoes, or bread, and gravy. I guess the gravy and starch was to fill everyone up when meat and vegetables were short. I am 68 and Dad and Mom grew up during the Depression.

tigereye... We are zooming. Happy Easter to you, too. Daughter will come for dinner and show me how to zoom, and take home dinner for her clan. That is why i want gravy to be extra special. In all, there will be a total of three of us, Hopefully, my grands will look back and say, remember when we were 'under isolation' and grandma made the best gravy ever?
