Need master vanity lighting suggestions

We're in the process of getting new bath countertops, and want to improve the vanity lighting, also. We will be removing the soffit and two down lights over the vanity, and adding drywall to extend the sloped ceiling. Once the new under mount sinks are installed, there will be only 7 1/2 inches from the edge of the sink to the wall pop-out on the left - not enough space for a wall sconce. We'd like to utilize the existing ceiling wiring, and avoid having to rewire all the way to the switch. I doubt that the wire will "stretch" far enough to wire a wall-mounted fixture over the sink.

One idea would be to install a recessed led light with adjustable gimbal trim centered over each sink, supplemented by a two or three light vanity fixture in the center. If we go with this option, we would use two narrow, tall mirrors centered over the sinks. Will this provide enough balanced light? Any suggestions will be appreciated!
