kitchen hood enclosure without upper cabinets

I have attached a photo of the kitchen hood fan insert we have purchased. We will be installing it between two windows in our new build kitchen and it will be venting through the 10 ft high ceiling. We will not have upper cabinets in the kitchen (with the exception of a 9 ft tall pantry section) but the lowers are a natural hickory slab. We had wanted a fully stainless hood at one point but needed a remote for ADA compliance. Not wanting to invest in a super custom hood from a stainless fabricator has left me with whatever our builder and cabinet company can construct for us. The current suggestion is to do hickory up to the height of the pantry unit (9 ft) and then drywall the last foot. We are hoping for light and airy to match the rest of the walls without uppers but the designer has said we need to cover the insert with wood. I understand fire concerns but wonder how others have achieved it. Thanks for any input you all can offer.

Can you not just do drywall? Light and airy would suggest just doing a drywall box, painted to match the walls.

The designer says wood, but what does the manufacturer's installation instructions say?

Thanhs for your reply! I had thought about drywall but was concerned about grease and oils collecting. I know the cabinets in our current kitchen end up collecting grease. We use our current fan on high, but cook a lot of high heat Asian dishes. We purchased this new insert hoping to help with that but I guess I was assuming drywall wouldn’t be a good idea. The manufacturer says that we can purchase a metal liner as an accessory piece but the appliance company told ya that they have had issues of not fitting well? I’m not certain.

Forgive me if I'm misunderstanding, but can you not just insert that unit into a regular stainless hood? Why would one need to be custom fabricated? It might not fit exactly into a regular hood, sure, but it would be easy to cut and fit a small sheet of stainless (or aluminum) to make a "surround" to fill the space, and since it will be up under/inside the hood no one would see it. I don't see how it would affect functionality, either.

Again, I could be misunderstanding, but it seems like it would be pretty simple to me. I can buy sheets of stainless or aluminum pretty inexpensively at my local hardware and home stores, too, in a number of sizes.

It sounds like I need to sit down and discuss this more clearly with our kitchen designer. Perhaps I am misunderstanding his concerns. I will look into the stainless surround idea and see if we can come to a better conclusion. Thanks for making me pause and think it through.
