Preliminary Kitchen Layout for custom build

Hi all. Here's my preliminary kitchen layout. Apologies for no dimensions - aisles are all 48". Island is probably 8.5-9'.

My biggest concern is that I'm leaning towards a 36" induction cooktop to avoid triggering MUA (required by code for CFM>300). That means my original idea of using a 48" range with 2 ovens all in one place is gone, and I need to find space for ovens elsewhere. I do a lot of cooktop to range cooking so I want them reasonably close. Thinking I want 2 ovens (one full, one maybe steam? Not sure) and I'll put the microwave in the pantry.

Prep sink can go anywhere in the island - I'd just prefer to have it off center.

I'm all in on drawers, but where do I put my dishes and where do I put my garbage? I'm thinking the island might be the best place for garbage but I don't want it too far from the dishwasher.

Also I'd like a beverage fridge to get DH's monster drinks out of the main fridge, but I'm worried that I'll use up too much island space.

Anyway, just looking for anything I might be missing at this stage! TIA.

Here are a couple of quick ideas--

I wouldn't usually put two vertical elements between counter areas, but since you need space for drinks, and a space for the MW, I combined them on one area to the left of the fridge, which could also house the coffee pot.

On an island that size, I don't think there will be a problem with centering the prep sink--you have a nice prep counter on one side, and landing space on the other side for incoming groceries to be loaded to the pantry and fridge. Prep sink is m/l centered between the fridge and range, so perfect, IMO. Shared trash pull-out can go on the corner near the clean-up zone and range.

Dishes can be kept in cabinets to the left of the sink, convenient to the DW, and to anyone plating from the range, or gathering dishes to set the table.

    Very nice starting layout!

If you moved the prep sink over like Mama-goose suggests, you could change the end of the island closest to the family room into seating -- one seat on the end and 3 across the long part of island. If I could change one thing in my kitchen it would be to have seating on two sides of the island.

For your husband's drinks, you might consider a refrigerator drawer -- I have two for beverages -- When I was looking at beverage fridges (7+ years ago, so things may have changed), the lowest temp on most was somewhere between 38-40 degrees. The refrigerator drawers can chill to 33 degrees - I like my water/soda/beer really cold. I also liked that I could panel the refrigerator drawers to look like regular drawers.

@mama goose_gw zn6OH Thank you! I have the coffee next to fridge situation in my current house and I was so sad I didn't see a spot for it in this layout. This layout might solve that for me!

@rmsaustin I didn't even think about refrigerator drawers! I will definitely consider that!

I would definitely want to add a seat at the end of the island as well. We have one and its the most popular seat in the kitchen. If there is a way to have seats on both sides of the island I would prefer that the most.

I think you could have seats on the sides, as rmsaustin and sseibert suggest, without giving up prep space, but you'd need to reduce the landing space to the right and changes the style of the side of the island. That would put the prep space in m/l the center of the island, and centered on the opening to the DR, and beyond. Just make sure the seat across from the DW isn't in conflict with the open door.

Shorter island, with three seats on the long side, and more space at the ends:
