Orchid Problems

This orchid is about to drive me crazy!!! I bought it a long while ago (pre-quarantine) not realizing how to take care of it. A couple of months ago (during quarantine) I really got into plants and started researching how to properly care for an orchid. I discovered that all the roots had rotted but I still had leaves so I was encouraged that I could save it. I trimmed all the dead roots off and stuck it in some water for about 3 weeks. I then learned about the tea method. I placed the orchid in tea water during the day and let it dry out at night and lo and behold I started seeing little spuds grow. I did this for about 2 weeks and then transferred it to a pot with orchid mix on bottom and sphagnum on top. Because there were no deep roots I only kept the sphagnum wet by spraying it with rain water. I’d peek every once and a while and noticed that a flower spike was growing. Fast forward to today, I take a peak and the bottom is fuzzy like mold. I dig deeper and the orchid mix is fuzzy as well. I tossed the sphagnum and mix in the trash and put the orchid back into some tea water. There is a long spike growing but it doesn’t look like any roots have grown. Also during this time 2 new leaves have grown. I’m convinced it’s not beyond hope but it’s apparent I have no idea of what I’m doing I’m determined to revive this plant and refuse to buy another orchid until I do. Any help is appreciated.
