Depending on the finish it might be slippery when wet, also not generally considered a great finish for resale, etc. Have you considered wood or stone or ceramic tile.

I have vinyl flooring in my kitchen/laundry room. I like it because it doesn't look like faux tile or wood floor and it's easy to clean. It has an all over random pattern. My house is not the kind of house that investing in hardwood or tile, etc would be worth the money. It also didn't have the door clearance that would allow a thicker material. Itisn't an open concept so using it was easy to keep it to one location in the house. It's better than the carpet that was in there (and in the bathrooms!) when we bought the house. Would I have liked to do hardwood or other nicer finish? Yes, but I know the limitations of my house and the floor looks good and has worn well.

Pros: Sheet vinyl comes in wide 12' widths, so there are few seams. There's no grout. It can be coved up the wall which makes sweeping and washing easier. It's easy to clean, comes in lots of patterns. Things don't break as often when dropped on vinyl as on tile or stone. It is warm underfoot. A clear top layer prevents staining. Waterproof, especially if seams are professionally sealed. It is cheaper to replace than tile or stone or wood. Removing an outdated tile or stone floor is much, much more work than adding a new layer of vinyl flooring. If they are worn, they can be overcoated with Mop N Glo or Pledge "Finish", neither of which are slippery underfoot.

The desirability for resale depends on your area and price range. Tile styles change significantly on 10-15 year timescales. Today's large tiles will be outdated in 10 or 15 years, sooner for the fashion-forward buyer.

Cons: in some markets, most buyers want tile or stone. The new textured matt finishes are harder to clean than the older shiny and fairly smooth finishes.

I would not buy vinyl tiles for a kitchen. Too many seams, tiles shrink slightly when it is cold, and they never look really, really good.
